CHEF MUNDI
"My mission is to get people to enjoy the rich and diverse flavours of Africa"
African flavours especially from sub-Saharan region are not widely known and celebrated. Growing up in east Africa I was exposed to simple but unique flavours as well as cooking techniques. Even though they were simple, I try to build upon them while incorporating other flavours and techniques that I have learned over the years working in different establishments in Australia.
The result is a fusion of unique flavours while still emphasising African flavours by the use of ingredients such as cloves, cardamon, exotic vegetables and many more. I bring these flavours to the streets, markets and events all across Melbourne.
